I have lived in Plymouth for five years, and I plan on living here for decades to come. Some points that may be relevant, based on your post and comments here:

Plymouth is Dullsville, U.S.A. You'd be forgiven for thinking it's all new housing developments and chain businesses you are aware of but have no intention of visiting. But you are a 15-minute drive from anything from hip neighborhoods with unique shops and restaurants, to beautiful natural areas for hiking, biking, skiing, etc.

Looks like you know this, but the schools are very well-regarded. Buying a house here is your admission ticket.

I would also argue that Plymouth is bereft of a lot of the stores that a budget-conscious suburbanite would visit (e.g. Costco, Walmart, Menards, Aldi, Trader Joe's), so I am typically going one suburb over to get groceries, household items, etc.

Personally, all I do is work and take care of my family, so close proximity to interesting things to do is pretty meaningless to me. There's a certain cachet to saying you live in Edina or Minnetonka that I just don't care enough about. I'm just a 15-minute drive (or slightly longer bike ride) from all those things, for those rare occasions that I can carve out time for a little R&R.

Been in Plymouth for 2 years, it's been great for me an my family. We live south of the 6 and west of the 101. It's suburbia but older and I think with more character. Lots of new builds north of 55, that were too ticky tacky little boxes ;). Love poping down to Wayaza and going to the beach there and it's close enough to downtown when we need/want to go down there. What I didn't know was that Plymouth is the 8th largest city population wise in MN and with that comes a lot of resources - Parks, recreation, playfields, services, events, etc. It's been good for us. Plymouth is a “nice” suburb but it’s not a dense, older, Main St with small businesses type of vibe. It’s a lot of chains and stuff like that. Traffic can be pretty bad going in and out of Minneapolis but it’s fine in Plymouth itself. It’s a very big suburb but parts of it are close to Wayzata which has a pleasant waterfront main street (though some may feel it has too much of a preppy rich white golfer kind of vibe). If you are against copy and paste suburbanism I would suggest looking at inner ring suburbs closer to the Minneapolis and St. Paul urban core. The traffic is generally worse in these areas, however.
